Taste of the Nation: Helping to Fight Childhood Hunger

Last week, on Wednesday, June 22nd, The Stonewall Kitchen Cafe and Cooking School participated in an event called "Taste of the Nation" in Portsmouth, NH.  Taste of the Nation is a benefit that raises money for Share our Strength which helps to fight childhood hunger across the United States.  Participating in an event such as this is such an eye opening experience.  When most people think of starving children they think of third world countries, not the child that lives down the road.  According to Share our Strength, 17 million children in America are at risk of hunger which is about 1 in 4 children.

This year at the Taste of the Nation event, we served attendees our famous Roasted Apple  Chicken Salad from the Cafe and a Lemon Curd Tartlet from the Cooking School.

Liz, our Cafe Manager preparing for the crowds

Theresa, our Cooking School Chef Manager serving up her Lemon Curd Tartletts

Despite the rainy weather, the event was a success!  Share our Strength was able to raise over $140,000 just in this one event alone to go to children in need.  We enjoy attending these events each year because it is such a great cause and a fun event.

In an effort to continue to contribute throughout the year, Stonewall Kitchen also offers a gift on our website and in our stores called Our Blueberry Breakfast Gift that donates a portion of the sales to Share our Strength.

Taste of the Nation events take place across the country throughout the year and are a great experience if you are able to attend.  You get the chance to sample food from several local restaurants all while helping a good cause!

From the Garden to the Kitchen - Opening this weekend!

Every year Jonathan plans something special for our gardens like last year's top secret garden project. This year the gardens are even more elaborate for our 20th anniversary! Jonathan King along with curator Mary Harding and landscape designer Jacqueline Nooney have created a two part exhibition called 'From the Garden to the Kitchen.' Artwork will be featured in the gardens at our York Company Store, as well as at the George Marshall Store Gallery here in York, ME. (click below to see the full sized exhibition announcement)
The gallery portion of this exhibition opens this weekend at the George Marshall Store Gallery. We are especially excited excited for the opening because myself, Katie Ring - Photographer at Stonewall Kitchen, and Melissa Lyford - Graphic Designer at Stonewall Kitchen are featured artists in the show. We hope that if you're in York you'll be able to stop by the gallery to see the artwork. The gallery portion of the show runs from Saturday June 4th until July 11th.

Also opening this weekend is our local farmer's market. Be sure to check out Stephanie's post about it for more info.

Cooking School as Tweetup Destination

Last Saturday, the Stonewall Kitchen Cooking School became part of a new social media trend – the “tweetup.” The Beachmere Inn in neighboring Ogunquit coordinated a series of events over the course of the weekend, and a group of Twitter followers congregated to meet and participate. The group booked a private event at the Cooking School, and at 6:00pm sharp, a convoy of cars brought 28 people to class.

The menu was to die for. Eggplant Stacks with Mozzarella, Tomato, Panko-Breaded Eggplant, and Balsamic Vinegar Reduction. Caramelized Onion, Bacon, and Gruyere Tart with Herbed Crust served with Roasted Asparagus with Fresh Lemon and Parmesan Bread Crumbs (both recipes below). Goat Cheese and Sun-Roasted Tomato-Stuffed Chicken served with Ultimate Mashed Potatoes and drizzled with Pomegranate Grille Sauce. Chocolate Bread Pudding with Spiced Rum Butterscotch Sauce. Beyond delicious. And if the overall buzz through the crowd was any indication, enjoyed by one and all.

Throughout the class, instructors Donna Speirs and Beth Kozemchak intermingled helpful hints that many in the Tweetup crowd found particularly interesting, including discussions about the gender of eggplants and the best starting water temperature for boiling potatoes (in case you’re wondering, cold). Naturally, many participants tweeted along the way. All in all, a lively class!

Thanks to Sarah at the Beachmere Inn for coordinating the event. And to our own Jessica Elsemore who served both as prep assistant for the class and photographer! More pictures from the Beachmere Tweetup can be found on their Facebook page and ours.

Caramelized Onion, Bacon, and Gruyere Tart with Herbed Crust

Crust:

2 cups all-purpose flour
1 Tbsp chopped fresh thyme, or 1 teaspoon dried
1 Tbsp chopped fresh rosemary, or 1 teaspoon dried
Pinch of salt
1 stick unsalted butter (1/2 cup) well chilled and diced

Filling:

2 strips thick country-style bacon
1 Tbsp olive oil
1 large onion, very thinly sliced
1 shallot, very thinly sliced
1 Tbsp finely chopped fresh thyme, or 1 teaspoon dried
1 Tbsp finely chopped fresh rosemary, or 1 teaspoon dried and crumbled
Salt
Freshly ground black pepper
2 large eggs
2 cups sour cream or crème fraiche
1 cup grated Gruyere or Parmesan cheese

Make the Crust:

In the bowl of a food processor, blend the flour, herbs and salt until finely mixed. Add the butter and pulse about 15 times, or until the mixture resembles coarse cornmeal. With the motor running, add enough cold water so that the dough JUST starts to pull away from the sides of the bowl. (Alternatively, mix the flour, herbs and salt in a bowl. Add the butter and use your hands or a pastry blender to work the butter into the flour until the mixture resembles coarse cornmeal. Add enough water so the dough just begins to come together.) Place the dough on a large sheet of aluminum foil, seal tightly and refrigerate for at least 1 hour or overnight.

Prepare the Filling:

In a large, heavy skillet, cook the bacon over medium-low heat for 4 to 5 minutes per side until crisp. Remove and drain on a paper towel. Crumble or cut the bacon into ½ inch piece. Discard all but 1 tbsp of the bacon fat.

Heat the skillet with the bacon fat over low heat. Add the oil, onion, shallot, thyme, rosemary, and salt and pepper to taste, and cook, stirring, for 25 to 30 minutes, or until the onion is golden brown and caramelized. Remove from the heat and let cool.

Meanwhile, in a large bowl, whisk the eggs. Add the sour cream and mix until well blended. Add the cheese and the bacon. Add salt and pepper to taste and then the cooled onion mixture. Mix to combine.

Place a rack in the middle of the oven and preheat to 400 degrees F.

Working on a lightly floured surface, roll the dough into a rectangle about 12 inches long and 9 inches wide. Settle the dough into a tart pan that is about 11 by 8 inches with a removable bottom. Let the dough hang over the edges and then press the dough into the tart pan, trimming the edges on all sides.

Place the tart pan on a baking sheet. Pour the filling into the dough and bake for about 50 minutes, or until the tart puffs up slightly and has a beautiful golden brown color. Remove from the oven and let cool for 5 to 10 minutes. Remove the tart from the pan and place on a serving platter. Cut into 12 large squares or 24 smaller ones.

Roasted Asparagus with Fresh Lemon and Parmesan Bread Crumbs

2 bundles Asparagus
½ cup extra-virgin olive oil
Salt and pepper to taste
½ cup grated imported parmesan cheese
Fresh squeezed lemon juice

Cut and trim asparagus. Place in a glass 9 X 13 inch pan. Pour olive oil over asparagus; salt and pepper; drizzle with lemon juice, then sprinkle parmesan cheese bread crumbs over the asparagus. Bake at 425 degrees for 30 min.

Bread Crumbs:

1/2 cup fresh coarse bread crumbs
2 Tbsp finely grated Parmigiano-Reggiano
1 Tbsp chopped fresh parsley
Pinch of salt
2 tsp extra-virgin olive oil

In a small bowl, combine the bread crumbs, 2 tsp of the olive oil, 2 Tbsp of the Parmigiano, the parsley, and a pinch of salt.

Holiday Decorating and a giveaway!

The past two days we've been busy decorating for the Holidays. Monday our maintenance team set-up many of the trees in this photo. Yesterday,  as quickly as they continued to put the tress in the ground they were joined by more employees to add lights! We also decorated with garlands, wreaths, a sleigh, and many more decorations. The good news is we got it all done and it's looking great! You can see even more photos on our Facebook Page.

After seeing the photos, do you think that you know how many trees we put up around our York store? Jonathan wants to know if you can figure it out! The first correct guess, submitted here as a blog comment, will be the winner! (Sorry, no employees. Many of us know the answer or could go outside and count!) What is the prize? This canister of our Peppermint Hot Chocolate. We hope that you will share it with your family & friends to warm you all up after your own holiday decorating. So, without further ado, let the guessing game begin! ... Do you think guessing is one of the reindeer games?

*Check back on Friday when we'll announce who submitted the first correct guess! If many of you guess correctly the one who submitted the first correct answer will win. If you're chosen as the winner please comment again to leave your email address. (Or leave a link to your twitter or another way to contact you in your comment) Don't worry, we won't publish it, we'll just verify that it's you!

Harvest on the Harbor, did you enjoy it as much as we did?

I stand by my claim that Harvest on the Harbor was a foodie's idea of heaven. The hardest part for me was that I didn't have a big enough stomach! With so many wonderful choices I found myself full before I was out of foods and beverages to sample.

My first stop, of course, was to visit my co-workers and get some of the delicious bread pudding that I had been smelling all week! It seems that I wasn't the only one excited to get my hands on some. Many of you who visited our booth at Harvest on the Harbor liked it so much that you wanted the recipe. Well, as Richard promised many of you, I'm posting it.

Chocolate Bread Pudding with Bourbon Caramel Sauce

Serves 6

8 oz. bittersweet chocolate, chopped

4 oz. good quality white chocolate, chopped

1/2 cups whole milk

2 cup heavy cream

4 large eggs

1/2 cup plus 4 Tbsp. sugar; divided

2 tsp. pure vanilla extract

1/2 tsp. salt

14 cups, 3/4” cubed French bread with crust( about 12 zo.)

2 cups SWK Dulce de Leche sauce

1/4 cup Bourbon, plus extra to taste

Whipped cream, garnish

Dusting of cocoa

Preheat oven 350. Butter (not non-stick spray) 13x9x2 baking dish. Combine bread and both chocolates in a large bowl; Toss to blend. In another bowl, using an electric mixer, beat eggs,1/2 cup plus 2 Tbsp. sugar and vanilla to blend. Gradually beat in 1 1/2 cups cream and the milk. Add cream mixture to bread mixture; stir to combine. Let stand 30 minutes. Transfer bread mixture to prepared dish, spreading evenly. Drizzle the remaining 1/2 cup cream. Sprinkle with remaining 2 Tbsp sugar. Bake pudding until edges are golden and custard is set in the center, about 1 hour. Cool pudding slightly. Drizzle bread pudding with Bourbon Caramel Sauce and serve warm with whipped cream and dusting of cocoa.

Bourbon Caramel Sauce: Heat 2 cups of SWK Dulce de Leche. Add 1/4 cup (or more!) of bourbon. Mix well. Bring to simmer. Stir constantly, about 5 minutes. Remove and serve over pudding.

Patty demonstrated this recipe on the sweet stage with Zac Young of Bravo TV’s newest show, Top Chef Just Desserts. Did you know that Zac is from Maine? He is! In the style of 6 degrees of separation...Zac's 2nd cousin is my friend Abby's co-worker. Ridiculous connection, but true!

More photos from the event, like this one of me running off with an extra tray of bread pudding, are on our Cooking School's Facebook page. What happened to the rest of the extra trays? Several went to the Good Shepard Food Bank, some were saved for samples in our York store, and some were brought into the employee dining room for everyone else who was tortured with the delicious smell all week to try!

Lastly, how many jars of our Dulce de Leche dessert sauce did our cooking school use to make enough bread pudding for 4,000? 4 cases...48 jars!

Harvest on the Harbor this weekend

Clearly our cooking school has it in for me. They've been torturing me for the past two days! This weekend they're sampling bread pudding at Harvest on the Harbor. This requires making enough bread pudding to feed 4,000. In order to bake up that much they're using every oven in our entire building...including the one down here in the photo studio. So, for two days I've been constantly smelling delicious double chocolate bread pudding! ALL DAY. Oh the torture! It looks like I'll just have to attend to get a taste!

It doesn't take much arm twisting to get to me to go to Harvest on the Harbor. It's a foodie's heaven with sampling from a huge marketplace! You'll also find a grilling stage and a sweets stage where you'll be able to see us and this bread pudding I've been talking about. Here is the full list of presenters. Tickets are available here for session I (12-2:30) or II (4-6:30). For our friends in Boston, Portland is only a 2 hour drive and the foliage is currently beautiful and at it's peak!

Did you ever wonder what goes into making bread Pudding for 4,000? Approximately:
- 75 loaves french bread
- 3 cases of cream
- 2 cases of eggs
- 30 pounds dark chocolate chips
- 16 pounds white chocolate chips
- 20 pounds sugar
- 3 gallons of milk
- 1 quart of vanilla
& guess how many jars of our Dulce de Leche dessert sauce?
