A Parisian afternoon in Maine




I woke up this morning thinking I was heading to Maine for the day; little did I know that a surprise lunchtime excursion to Paris was on the agenda. The French have a word, terroir meaning “a sense of place,” the closer to home something comes from, the better it is. And though my lunch at Stonewall Kitchen Cooking School was influenced by Parisian flavors, it did not take a trip to the Rue Mouffetard Market to get the proper ingredients; a trip to the local market and produce stand provided bountiful summertime ingredients to embrace Beth Howell’s interpretation of an ideal
Parisian lunch - eaten under the shadow of a large bistro umbrella along the banks of the Seine or within the comfortable and beautiful environs of the Stonewall Kitchen Cooking School.

Stonewall Kitchen’s Cooking School offered the perfect respite from the hot July afternoon for myself as well as the full room of excited guests. With passports in hand, and adorned in sparkly gold sandals and pretty sundresses, two young girls from Florida were ready to embrace a Maine afternoon in Paris. Carlisle and Cate came to the cooking school with mom, Suzanne, family friend, Tara, and grandmother, Lynn. Cate, an aspiring young cook, liked the brussels sprouts - sautéed in shallot butter with currants and pine nuts – best, and enjoyed learning about the different parts and uses of the chef’s knife. Carlisle really enjoyed the baked apple, “Ambrosia” dessert; who could deny her affection for this simple, “food of the gods” treat, quietly kissed by the essence of orange and a sprinkling of coconut.

We all left via the cooking school tarmac and entered the customs gate of Maine with our bellies full, smiles on our faces and wish-you-were-here stories to share.

We ♥ Lobster

Do you love lobster too? In Maine, especially in the summertime, how can you not? Lucky me, I have access to delicious lobster-filled lunches on every day of the week. We decided to feature our cafehttp://www.stonewallkitchen.com/cafe.html's Lobster Mac & Cheese here on our blog and I was in foodie heaven at the mere thought!

Lobster Mac & Cheese - Penne pasta tossed in Mozzarella, Fontina, Parmesan, and Mascarpone cheeses with fresh local lobster meat and thyme, baked until golden brown, topped with rosemary breadcrumbs.

First, don't you just love the cute little All-Clad pot that it's served in? I was impressed just to look at it. Not to worry, this didn't go to waste. (I even shared with my intern Emily) The second we finished shooting, we devoured it! We did pause long enough to enjoy the creamy blend of cheeses, crispy bread crumb topping, and moist chunks for lobster meat - claw meat not tiny pieces! The salad greens with balsamic dressing do pair well with this rich indulgence. I suggest you come visit and order some from our cafe. And get here quick - before I eat it all!

Lobster BLT Sandwich - Fresh lobster lightly dressed with mayonnaise and chopped celery. Topped with cherrywood-smoked bacon, baby iceberg lettuce and vine-ripened tomatoes, served on toasted, local artisan brioche bread spread with our housemade basil aioli spread.

Local fresh lobster meat tossed lightly with mayonnaise and celery. Served with crisp lettuce in a grilled buttered New England hot dog roll.


Cafe Lobster BLT Salad - Local lobster meat, tossed lightly with mayonnaise & chopped celery served on a bed of chopped baby iceberg lettuce. Topped with crumbled cherrywood-smoked bacon, slices of vine-ripened tomatoes and housemade croutons. Dressing of your choice.

(Friday Special) Lobster Pot Pie

Maine, a vacationland

We recently commented on our Facebook page that beautiful Maine, which is our home, is vacationland. With a vacation weekend upon us, we asked our fans their favorite places to visit in Maine, and we were overwhelmed by the enthusiastic response.
